Cantinho mineiro: estudo de de abertura de um restaurante em Piracicaba/SP

Abstract

A ação de cozinhar é uma das mais antigas atividades humanas, que surgiu há aproximadamente sete mil anos atrás, quando então o homem descobriu meios seguros de obter e dominar o fogo. Com relação ao ofício de cozinheiro, não se tem ideia da data do seu início. O que existe são relatos de grandes banquetes na corte da mesopotâmia por volta de 3000 a.c., o que vem a ligar esses banquetes a provável existência de cozinheiro. Em face disso, confirma-se que essa é uma profissão antiquíssima e, também, mostra que a comida sempre foi um importante elemento nas relações sociais e de poder. Para que se possa abrir um empreendimento de maneira estruturada e ter retorno sobre o investimento e sobre o esforço deve-se analisar muito bem o mercado e os fatores cruciais de sucesso. Este trabalho teve como foco verificar a viabilidade de implantação de um restaurante de gastronomia típica mineira em Piracicaba-SP, A pesquisa tem grande importância para a implantação do negócio. Para conhecer os potenciais consumidores do restaurante foi realizada uma pesquisa de mercado exploratória-descritiva quanto aos fins e quantitativa quanto aos meios, através de questionários estruturados e não disfarçados. Diante do estudo foi possível elaborar a estrutura do restaurante e estratégias de ação que podem influenciar diretamente no sucesso do empreendimento. Verificaram-se também dados financeiros e de mercado que potencialmente caracterizam um restaurante do gênero. Pôde-se concluir que é viável a implantação do restaurante, porém, em cenários nos quais a sazonalidade influencia diretamente o resultado do negócio.

Cooking is one of the oldest human activities, which appeared approximately seven thousand years ago, when man discovered safe means of obtaining and mastering fire. As for the cook's craft, there is no idea of when it began. What does exist are reports of great banquets at the Mesopotamian court around 3000 b.c., which links these banquets to the probable existence of a cook. This confirms that this is an ancient profession, and also shows that food has always been an important element in social and power relations. In order to open a business in a structured way and to have a return on investment and effort, the market and the crucial success factors must be analyzed very well. This work focused on verifying the feasibility of the implementation of a typical gastronomy restaurant in Piracicaba-SP. The research has great importance for the implementation of the business. To get to know the potential consumers of the restaurant an exploratory-descriptive market research was carried out as to the ends and quantitative as to the means, through structured and undisguised questionnaires. In view of the study it was possible to elaborate the restaurant's structure and action strategies that can directly influence the success of the enterprise. Financial and market data that potentially characterize a restaurant of this kind were also verified. It was possible to conclude that the implementation of the restaurant is feasible, however, in scenarios in which the seasonality directly influences the business result.
