Peixinho Stachys byzantina: avaliação do conhecimento populacional desta planta alimentícia não convencional

Abstract

As Plantas Alimentícias Não Convencionais (PANC) contribuem para uma alimentação saudável e saúde das pessoas, devido serem um rico aporte nutricional. É imprescindível divulgar e incluir essas espécies nas refeições dos brasileiros, com o intuito de incrementar e diversificar o consumo de vegetais, resgatar a tradição cultural e por se constituir em uma nova fonte de renda. Entre as PANC, o peixinho se destaca por possuir sabor e aroma inusitados, semelhantes à de peixes como o lambari, ser inovação alimentar para os vegetarianos, veganos e plant based, além da diversificação culinária; empanado frito ou assado, refogado e em recheios afins. A planta peixinho possui potencial funcional por apresentar em sua constituição, compostos bioativos; os fenólicos e carotenoides, propriedades antioxidante, antibacteriana e anti-inflamatória, conter ferro, potássio, cálcio e fibras, cujo consumo regular pode estar associado ao bem-estar e à melhoria das Doenças Crônicas Não Transmissíveis (DCNT). O presente trabalho teve como objetivo avaliar o conhecimento da população sobre as Plantas Alimentícias Não Convencionais, com destaque para o peixinho Stachys byzantina. A pesquisa foi realizada, por meio, de um questionário aplicado on-line, a 192 participantes, contendo 14 questões de cunho interrogativo e informativo, elaborado na plataforma do Google Forms. Baseando-se nos resultados deste estudo, ficou evidente a falta de informação e divulgação das PANC em geral, com destaque para o peixinho a espécie escolhida na pesquisa. Verifica-se que os entrevistados, após serem informados ao longo das questões sobre as peculiaridades nutricional, medicinal e funcional; bem como, formas de consumo e finalidade da PANC peixinho, demonstraram-se dispostos a incluí-las na alimentação. No entanto, há necessidades de mais estudos científicos e divulgação, dessas hortaliças não convencionais, pelos canais de comunicação e disponibilidade em grandes centros comerciais.

ABSTRACT: The Non-Conventional Food Plants (PANC) created for a healthy food and people's health, due to being a rich contribution nutritional. It is to divulge and include these species in the meals of Brazilians, with the aim of increasing and diversifying the consumption of vegetables, maintain the cultural tradition and for constituting a new source of income. Among the PANC, the peixinho stands out for having an unusual flavor and aroma, similar to fish such as lambari, being food innovation for vegetarians, vegans and plant based, in addition to culinary diversification; breaded, fried or roasted, sautéed and in similar fillings. The peixinho plant has functional potential for presenting bioactive compounds in its constitution; phenolics and carotenoids, antioxidant, antibacterial and anti-inflammatory properties, contain iron, potassium, calcium and fiber, whose regular consumption may be associated with well-being and the improvement of Chronic Noncommunicable Diseases (NCDs). The present work aimed to evaluate the knowledge of the population about Non-Conventional Food Plants, with emphasis on the little fish Stachys byzantina. The research was carried out through an online class applied to 192 participants, containing 14 questions of an interrogative and informative nature, prepared on the Google Forms platform. Based on the results of this study, it was evident the lack of information and dissemination of PANC in general, with emphasis on the peixinho, the species chosen in the research. It appears that the preparations, after being informed throughout the questions about the nutritional, medicinal and functional peculiarities; as well as forms of consumption and purpose of PANC peixinho, exciting to include them in the diet. However, there is a need for more scientific studies and dissemination of these non-classical vegetables through communication channels and availability in large shopping centers.
